- 1 inch ginger
- 1/2 teaspoon onion powder
- 1/2 hot green chili, like serrano
- 1 teaspoon garam masala
- 1/4 teaspoon ground cinnamon, cardamom, cloves, mustard powder, and red pepper
- 3/4 teaspoon salt
- 1/4 teaspoon sugar
- 2 teaspoons oil (optional)
- 1 1/2 cups fresh baby greens (or 1 cup frozen spinach)
- 1.5 to 2 cups vegetables (cauliflower, green beans, carrots, peas, zucchini, broccoli)
- 1 cup cooked chickpeas or diced tofu (optional)
- salt and black pepper
- 1 sheet puff pastry
- 2 teaspoons maple syrup (optional)
- 1 tablespoon non-dairy milk (optional)
Preheat the oven to 220º C. Let's get started!
Add all the masala sauce ingredients to a blender and blend well. Taste and adjust salt and spices if necessary. Don't worry, it's very easy!
Place all the baby greens and vegetables in a baking dish. Pour the sauce over and mix well. Now things are getting exciting!
Cover the dish loosely with parchment paper or foil and bake for 25 minutes. Roll out the puff pastry and cut into desired shapes.
