Delicious and Gluten-Free Gumbo Recipe

- 1 tablespoon avocado oil
- 450 g chicken breast, diced
- 340 g Andouille sausage, sliced
- 2 teaspoons salt
- 2 teaspoons black pepper
- ½ cup butter, diced
- ½ cup 1:1 GF flour
- 1 large onion, chopped
- 1 red bell pepper, diced
- 1 orange bell pepper, diced
- ½ cup celery, chopped
- ½ cup okra, chopped
- 2 tablespoons garlic, minced
- 1 tablespoon Cajun seasoning
- 1 tablespoon fresh thyme
- 1 tablespoon tomato paste
- 4 cups chicken broth
- 1 can (425 g) diced tomatoes
- 3 bay leaves
- 1 teaspoon salt
- 1 teaspoon black pepper
- 450 g shrimp, cleaned and cooked
- ¼ cup 1:1 GF flour
- ¾ cup water
- White rice
- Green onion, chopped
Heat a large pot over medium heat. Add avocado oil and when the oil is hot, add the chicken. Season with salt and pepper, cook until the chicken is fully cooked. Then add the sausages and cook until browned. Transfer to a plate.
Heat a medium pan and add some avocado oil. Add onion, bell peppers, okra, and celery. Cook until the onions are translucent, then add the garlic and cook for a few more minutes.
Keep the pot warm for the roux, melt the butter and add the flour. Whisk until well combined, cook until the mixture takes on a rich color but do not let it burn.
Add the vegetable mixture to the roux and cook, stirring, for a few minutes.
Add Cajun seasoning, thyme, and tomato paste, stir.
Return the chicken and sausages to the pot. Add diced tomatoes, chicken broth, bay leaves, salt, and pepper. Bring to a boil, then reduce the heat and simmer for about 1 hour.
After an hour, add the shrimp and cook for a few more minutes until flavorful.
To thicken the gumbo, mix the gluten-free flour and water in a bowl, whisk until no lumps remain.
Add this mixture to the pot and stir. Serve over rice with a sprinkle of green onion. Enjoy!
