Delicious Chicken Meatball Soup Recipe
Today in our kitchen, we have a warm bowl of chicken meatball soup! Believe me, this soup will warm you up on cold days. It's also very easy to make! Filled with tiny meatballs and delicious vegetables, this soup will bring joy to your table. If you're ready, let's head to the kitchen!
- 450 grams ground chicken
- 1 egg
- ½ cup finely chopped onion
- ¼ cup breadcrumbs
- ¼ cup grated parmesan cheese
- ½ teaspoon dried basil
- ½ teaspoon dried parsley
- ⅛ teaspoon black pepper
- ⅛ teaspoon salt
- 1 tablespoon olive oil
- 2 cups chopped carrots
- 1 cup finely chopped celery
- ½ cup finely chopped onion
- 1 tablespoon finely chopped garlic
- 6 cups low-sodium chicken broth
- 1 parmesan cheese rind
- 2 bay leaves
- ½ teaspoon dried basil
- ½ teaspoon dried parsley
- ½ teaspoon dried rosemary
- ¼ teaspoon black pepper
- ½ cup acini de pepe (small pasta)
- 3 cups chopped spinach
Preheat your oven to 230 degrees and prepare a baking sheet lined with parchment paper. Don't worry, this part is very easy!
In a bowl, mix all the ingredients for the meatballs well. Now things are getting exciting!
Place round meatballs, about half a tablespoon in size, on the baking sheet lined with parchment paper. Small meatballs are great, be sure to try them!
Bake the meatballs for 10 minutes or until golden brown. The kitchen is already starting to smell wonderful!
While the meatballs are baking, start the soup. In a large pot, heat the olive oil over medium heat. Add the carrots, celery, onion, and garlic. Sauté for about 5 minutes, until the onions start to soften.
Add the cooked meatballs, chicken broth, parmesan rind, and dried herbs to the pot. Do not add the chopped spinach and pasta yet! Cook the soup over medium heat for 10 minutes.
After the soup has cooked for 10 minutes, bring it to a boil. Once boiling, add the pasta and cook for half the time recommended on the pasta package.
Once the pasta is cooked, remove the soup from the heat. Remove the bay leaves and parmesan rind.
Add the chopped spinach. Cover and let it sit for 3 minutes to allow the spinach to soften.
Serve hot, sprinkled with parmesan cheese. Enjoy your meal!
