Flavor Feast: Paleo Breakfast Casserole

- ¼ kg Mini Gold Potatoes, quartered
- ¼ kg Brussels Sprouts, halved
- 1 Onion, thinly sliced
- 1 Cup Baby Spinach
- 1 Tablespoon Garlic, minced
- 10 Eggs, beaten
- ¼ Cup Milk
- ½ Tablespoon Sweet Red Pepper
- 1 Teaspoon Salt
- 1 Teaspoon Black Pepper
- Chopped Chives for serving
- Hot Sauce for serving
Preheat the oven to 190 degrees and prepare a 23x13 cm baking dish.
In a mixing bowl, combine the potatoes, Brussels sprouts, onions, and garlic. Season with salt and pepper and drizzle with olive oil. Toss to coat and roast on a flat baking sheet for about 15 minutes.
In another bowl, combine the eggs, milk, sweet red pepper, salt, and black pepper. Whisk until frothy.
When the vegetables are roasted, transfer them to the baking dish and add the spinach on top.
Pour the egg mixture over them. Return to the oven and bake for about 20 more minutes until the eggs are set.
