- 1 cup blanched almond flour
- 3 tablespoons tapioca starch
- 1/8 teaspoon baking soda
- 1/4 teaspoon salt
- 3 tablespoons maple syrup
- 1.5 tablespoons melted coconut oil
- 1/2 teaspoon vanilla extract
- 1 teaspoon instant coffee
- 2 tablespoons non-dairy cream cheese
- 1 teaspoon powdered sugar
- 2 tablespoons instant coffee
- 2 tablespoons brown sugar
- 1 tablespoon coconut cream
Preheat the oven to 168°C and prepare a baking sheet with parchment paper.
In a small bowl, mix almond flour, tapioca starch, baking soda, and salt.
Then add maple syrup, coconut oil, vanilla extract, and coffee. Mix and chill the dough in the refrigerator for 20-25 minutes.
Mix the cream cheese with the sugar and let it sit on the counter.
In a small pan, mix coffee and brown sugar and bring to a boil. Add coconut cream and cook until thickened.
Remove the dough from the fridge, add more almond flour if necessary.
Take pieces from the dough, flatten them, and add the cream cheese mixture in the center.
Drizzle with coffee-caramel syrup and cover with dough.
Bake the cookies in the oven for 12-15 minutes and let them cool.
