- 8 oz ricotta cheese
- 3 oz prosciutto, finely chopped
- 1 egg
- 1 tablespoon butter, softened

- 4 oz extra firm tofu, drained and pressed
- 2 oz shiitake mushrooms
- 2 oz champignon mushrooms
- 2 tablespoons nutritional yeast
- 3 cloves garlic, finely chopped
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon lemon juice
- ½ teaspoon lemon zest
- 1 ⅓ cups all-purpose gluten-free flour
- 2 teaspoons xanthan gum
- ⅓ cup cornstarch
- 1 teaspoon salt
- 1 tablespoon olive oil
- ½ cup very hot water
Let's start! Mix ingredients like ricotta cheese, prosciutto, egg, butter, and parmesan in a bowl. With the addition of salt and black pepper, you'll get a crumbly mixture. Ready? You can set it aside.
Now, take tofu, shiitake, and champignon mushrooms, along with nutritional yeast and other ingredients, and process them in a food processor until crumbled. Looks great, doesn't it?
In a large bowl, mix gluten-free flour, xanthan gum, and cornstarch. Don't forget the salt!
Continue mixing by adding olive oil. Then slowly add hot water until you get a smooth dough. Just like that!
Cover the dough with a kitchen towel and let it rest for 30 minutes. You're impatient, but waiting enhances the flavor!
Place the dough on a floured surface and divide it into two. Take one piece and roll it out thinly with a rolling pin, but not so thin that it tears.
Cut the dough with a 5 cm diameter cookie cutter. Add the filling to the center, wet the edges, and fold in half. Seal the corners tightly.
Drop the tortellini into boiling water or broth. They'll rise to the surface in 3-5 minutes, and that's when they're ready!
You can choose the sauce as you like. My favorite is garlic butter sauce, topped with plenty of parmesan and basil. Enjoy!
