Homemade Gluten-Free Sour Cherry Tart Recipe

- 5 cups sour cherries, washed and pitted
- 1 cup granulated sugar
- 1 teaspoon lemon juice
- 1 teaspoon gluten-free vanilla extract
- 1/4 teaspoon salt
- 3 tablespoons cornstarch
- Gluten-free tart crust
Preheat the oven to 190°C and place a baking sheet on the middle rack.
In a medium saucepan, heat the cherries over low heat until they begin to soften. Now things are getting good!
Add the sugar, lemon juice, vanilla, and salt. Boil for 2-3 minutes and add the cornstarch. Once it starts to thicken, remove from heat and cool for 10 minutes.
Mix the dough ingredients and add the butter, mixing until pea-sized pieces remain. Then add the milk and gather the dough.
Roll out the dough between parchment paper and place it in a greased tart pan. Shape the edges.
Pour the cooled cherry filling into the crust. Add tart crust or strips on top.
Cover with aluminum foil and bake for 40-50 minutes, removing the top foil after 25 minutes.
