How to Make Homemade Vegan Apple Bread - Moments Full of Flavor

- 1 and a half cups Granny Smith apples (188g), peeled and chopped into half-inch pieces
- 1/3 cup light brown sugar (67g)
- 1 and a half teaspoons ground cinnamon
- 2 cups all-purpose flour (250g)
- 1 teaspoon ground cinnamon
- Half teaspoon ground nutmeg
- 3 teaspoons baking powder
- Half teaspoon salt
- Half cup vegan butter (122g)
- 1 cup white granulated sugar (200g)
- 1 teaspoon pure vanilla extract
- 1 cup vegan buttermilk (240ml, 1 tablespoon lemon juice + soy milk up to 1 cup)
- 1 cup powdered sugar (120g)
- 1 and a half tablespoons soy milk (or another plant-based milk alternative)
Preheat the oven to 180°C (350°F) and grease a 9x5 loaf pan with non-stick spray. Place parchment paper so that it hangs over the sides of the pan to easily lift the apple bread out once baked.
Place the chopped apples in a mixing bowl, add brown sugar and cinnamon, and mix until all apple pieces are coated. Set aside.
Sift the flour into a mixing bowl, add cinnamon, nutmeg, baking powder, and salt, and mix. Set aside.
Add vegan butter and white granulated sugar to your mixer's bowl and mix until creamy.
Add vanilla extract and vegan buttermilk and mix. This mixture may look curdled and lumpy, but don't worry, it's normal.
Add your dry ingredients to the wet mixture and combine by hand. Do not overmix.
Add the chopped apple mixture and fold just until combined.
Transfer to the prepared pan and smooth the top.
Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
Lift the apple bread out of the pan using the overhanging parchment paper and place it on a wire rack to cool completely.
Once your bread is completely cool, prepare the glaze by mixing powdered sugar and soy milk in a bowl until smooth.
Drizzle the glaze over the bread and let it sit in the fridge for 5 minutes before slicing. Enjoy!
