Hello dear readers! Today, I will share with you a fantastic vegan taco recipe that will bring the winds of Jamaica to your kitchens. These tacos, where spices dance and combine with the freshness of mango and avocado, are candidates to become a new favorite on your tables. Especially when hosting guests, thanks to the filling you can prepare in advance, you will feel at ease during presentation. Come on, let's embark on this flavor journey together!
- 2 cups peeled and diced mango (about 2 medium)
- 1 medium ripe avocado (diced)
- ¾ cup chopped red onion
- ½ cup chopped cucumber
- 3 tablespoons fresh orange juice
- 3 tablespoons fresh lime juice
- ½ cup cilantro (finely chopped)
- Sea salt
- 1½ teaspoons onion powder
- 1 teaspoon sweet or hot paprika
- 1 teaspoon freshly ground black pepper
- 1 teaspoon dried thyme
- ½ teaspoon allspice
- ½ teaspoon cumin
- ¼ teaspoon cayenne pepper
- ¼ teaspoon ground cinnamon
- ¼ teaspoon nutmeg
- 2 (20-ounce) cans of jackfruit in brine or water
- 2 tablespoons extra virgin olive oil
- 6 green onions (white and light green parts, sliced)
- 4 cloves garlic (minced)
- 1½-inch piece of fresh ginger (grated)
- 1 habanero (serrano or jalapeño pepper, finely chopped)
- 2 tablespoons coconut sugar or agave syrup
- 2 tablespoons tomato paste
- ¼ cup tamari
- 3 tablespoons fresh lime juice
- 12 corn tortillas (grilled or warmed)
First, we prepare our mango-avocado salsa. In a medium bowl, gently combine mango, avocado, onion, cucumber, orange juice, lime juice, and cilantro. Don't forget to add a pinch of sea salt.
Now we prepare the Jamaican Jerk Spice. Combine all the spices in a small bowl. The wonderful aromas have already started to rise!
Next is the jackfruit! Drain the canned jackfruit and rinse under water, shaking off excess water. Remove the thick cores and shred the pieces to resemble pulled meat.
In a large pot, heat the oil over medium heat. Add the green onions and cook for 1-2 minutes until browned. Then add garlic, ginger, and pepper, cooking for another minute, stirring frequently.
Add the spice mixture, stirring to coat everything and allow the aromas to spread.
Add the shredded jackfruit, coconut sugar, tomato paste, tamari, and lime juice. Mix well. Add 1/2 cup of water and mix again. Cover and cook for 20 minutes, stirring occasionally.
That's it! Serve the jackfruit with tortillas and mango avocado salsa. Enjoy!
