Try Once, You'll Always Make It: Eggplant Tofu Stir-Fry
Hello dear kitchen friends! Today I have a delicious recipe for you: Eggplant Tofu Stir-Fry! This dish is a festival where spices dance and sweet and salty flavors blend together. This spicy, aromatic, and vegetable-filled recipe will add a different touch to your tables. Both healthy and quite practical. Are you ready to create wonders in your kitchen? Let's get started!
- 4 tablespoons Sesame Oil (Divided, more if needed)
- 450 grams Firm Tofu
- 3 Cloves Garlic (Crushed)
- 1 tablespoon Minced Ginger
- 1/4 teaspoon Red Pepper Flakes
- 450 grams Eggplant (Quartered and sliced with skin)
- 2 Medium Red Bell Peppers (Chopped)
- 3 tablespoons Green Onions (Chopped)
- 1/4 cup Soy Sauce (60 ml)
- 3 tablespoons Maple Syrup
- 1 tablespoon Toasted Sesame Oil
- 1 tablespoon Sriracha Sauce
- 1 tablespoon Rice Vinegar
- 1 tablespoon Cornstarch
- Basmati Rice
- Green Onions (Chopped)
- Sesame Seeds
First, let's press the tofu for 30 minutes. If you don't have a tofu press, you can use a plate and weight. Easy, right?
Once the tofu is pressed, cut it into cubes. Now things are getting exciting!
Add soy sauce, maple syrup, toasted sesame oil, sriracha sauce, rice vinegar, and cornstarch to a measuring cup. Mix to prepare a delicious sauce.
Add 2 tablespoons of sesame oil to our pan and fry the tofu until golden. Remove the tofu from the pan, but don't worry, they'll be back soon!
Add another 2 tablespoons of sesame oil to the pan. Add crushed garlic, minced ginger, red pepper flakes, and sliced eggplants. Fry until the eggplants are cooked. Now we've reached the most enjoyable part!
Eggplants can quickly absorb oil, so you can add a little more oil or vegetable broth if needed. This step is entirely up to you.
Add the red bell peppers and cook for 2 minutes.
Pour the prepared sauce over and gently mix to ensure the vegetables are evenly coated with the sauce.
Cook everything evenly until the sauce thickens.
Add the tofu back to the pan, add the chopped green onions, and gently mix to combine.
Serve over basmati rice, garnish with chopped green onions and a pinch of sesame seeds. Enjoy your meal!
