The New Star of Your Kitchen: Stuffed Zucchini

- 2 whole acorn squashes (halved)
- 1 tablespoon olive oil
- 450 grams ground meat (turkey or beef)
- 1.5 cups chopped baby bella mushrooms
- 1 cup peeled and chopped honeycrisp apple
- Half cup low-sodium chicken broth
- 2 teaspoons finely chopped fresh rosemary
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Half teaspoon black pepper
- Half teaspoon salt
- 1 cup shredded cheese (cheddar, gruyere, or mozzarella)
Set your oven to 230 degrees and line a tray with parchment paper. Don't forget to lightly oil the paper to prevent the squashes from sticking.
Cut the acorn squashes in half vertically, remove the seeds, and place them cut side down on the tray.
Bake for about 20 minutes, until fork-tender.
Heat 1 tablespoon of olive oil in a pan and sauté the ground meat for about 10 minutes until almost fully cooked.
Chop the mushrooms, apple, and herbs. Then add them to the cooked ground meat.
Add the chicken broth and spices, and sauté for another 5 minutes.
Remove the squashes from the oven and scoop out the insides, leaving a bit of filling.
Add the squash insides to the meat mixture and mix well.
Fill the squashes with the mixture and sprinkle cheese on top.
Bake at 230 degrees for 5-10 minutes until the cheese melts. If desired, broil for 2-3 minutes to make the cheese crispier.
