How to Make Try It Once, You'll Make It Always: Miso Butter Beans and Greens 6 steps
1

In a large skillet or medium saucepan, heat the olive oil over medium-low heat. Add the shallot and garlic. Don't worry, it's very easy! Sauté, stirring frequently, until the shallot becomes translucent and the garlic releases a pleasant aroma, about 2 minutes.

2

Now add the beans and vegetable broth to the pan. Bring the vegetable broth to a boil. Using a ladle, take about 1/4 cup (60 ml) of the hot vegetable broth into a small bowl or measuring cup.

3

Add the greens to the pan, stirring and wilting them. Cover the pan and allow to simmer and cook until the greens are tender, about 7-8 minutes. Open the lid and stir every few minutes.

4

While the greens are cooking, add the miso to the reserved hot vegetable broth. Using a small whisk, mix the miso and puree it.

5

When the greens are cooked, return this puree to the pan, along with the lemon zest and juice. Stir well to ensure everything is heated and combined. Taste the beans and greens and add black pepper and extra lemon juice as desired. Serve the mixture hot over your favorite toast, pasta, or cooked whole grain. If you like, you can finish it off with a drizzle of extra olive oil.

6

Enjoy! The beans and greens can be stored in an airtight container in the refrigerator for up to five days and can be frozen for up to eight weeks. Enjoy!
