- 1 pound Russet potatoes (about 2 large potatoes or about 2 ½ cups grated), peeled and grated
- 1/2 cup grated onion (1/2 small onion about 1/2 cup or 113 g)
- 2 tablespoons chickpea flour (to make chickpea 'egg')
- 2 tablespoons water (to make chickpea 'egg')
- 1/4 cup potato starch
- 1 teaspoon baking powder
- 1/2 teaspoon sea salt (plus more for topping)
- 1/4 cup avocado oil (divided // or other neutral, high-heat oil)
- Vegan Sour Cream
- 3-Ingredient Applesauce
- Thinly sliced green onions
Grate the peeled potatoes and onion. Then, squeeze out as much liquid as possible from the grated potatoes and onion using a cheesecloth or a clean kitchen towel. Don't worry, this process is easy!
In a medium mixing bowl, whisk together the chickpea flour and water to create a chickpea 'egg'. Now for the fun part; add the squeezed potato and onion mixture, potato starch, baking powder, and salt, and mix.
