How to Make A Warm Bowl: Kabocha and Chickpea Miso Soup

- 1-2 tablespoons olive oil
- 1 cup chopped white or yellow onion
- 4 large cloves garlic, finely chopped
- 4 heaping cups squash, seeds removed, peeled, and cut into 1.5-inch pieces
- 1 (425 g) can chickpeas, drained
- 2 cups vegetable broth
- 2 cups water
- 2 cups chopped kale
- 2 tablespoons chickpea miso paste
- Sesame seeds
Heat a large pot over medium heat. Add olive oil and onions, sauté until softened. Now add the garlic and stir until fragrant.
Add the kabocha squash, chickpeas, vegetable broth, and water. Bring to a boil, then reduce the heat. Cook until the squash is tender. Now add the kale and continue until softened.
In a small bowl, dissolve the miso paste in warm water. Add to the soup and mix well. Taste and add more miso if needed.
