How to Make Enjoy Lemon Vegetables & Fried Halloumi Bowls at Home

The refreshing taste of lemon combined with crispy fried halloumi creates a fantastic flavor. Adding roasted beetroot and pickled red onion on top makes it an inevitable feast of flavors. - 1 teaspoon extra virgin olive oil
- 4 cloves garlic (thinly sliced or crushed)
- 1.5 cups quinoa (rinsed)
- 1.5 cups vegetable broth
- 1 teaspoon ground sumac
- Juice of 1 lemon
- 1/3 cup hot water
- 1 teaspoon kosher salt
- 1 teaspoon granulated sugar
- 1/3 cup white wine vinegar
- 1 small red onion (halved and thinly sliced)
- 1 teaspoon extra virgin olive oil
- 2 cloves garlic (crushed)
- 1 large bunch rainbow chard or kale
- 1/4 teaspoon kosher salt
- 250 grams halloumi cheese (sliced about 0.5 cm thick)
- 225 grams cooked peeled beetroot (sliced)
- 1/2 cup tzatziki
- Optional for garnish: 1/4 cup pomegranate seeds
- Optional for garnish: Fresh mint leaves
Cook the quinoa. Heat a medium-sized pot, add olive oil and garlic, cook stirring until lightly golden. Add quinoa, vegetable broth, and sumac, bring to a boil if on the stove, then reduce heat and cook until water is absorbed. Add lemon juice and mix with a fork.
Prepare quick pickled red onion. In a medium jar, pour hot water over sugar and salt, stir. Add vinegar and place red onion slices inside.
Cook the chard. Heat a pan, add olive oil and garlic, then add chard stems and leaves, cook until wilted.
Fry the halloumi. Heat your pan, add halloumi slices, cook both sides until golden.
Prepare the bowls: Divide the quinoa into four bowls, top with pickled red onion, cooked chard, fried halloumi, and beetroot. Garnish with tzatziki, pomegranate seeds, and mint leaves. Enjoy!
