- 2 medium zucchinis (thinly sliced, about 2 cups)
- 3 teaspoons olive oil (divided)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 whole head of garlic
- 15 ounces canned lentils (drained or 1½ cups cooked lentils, drained)
- 3 teaspoons oil (divided)
- ¼ teaspoon salt
- ¼ teaspoon garlic powder
- 1 teaspoon chili pepper mix
- Lime juice (as needed)
- 15 ounces silken tofu (or firm tofu)
- ½ teaspoon salt
- 1 teaspoon lime zest (or lemon zest)
- 1 to 2 teaspoons miso
- 1 to 2 chipotle peppers in adobo sauce
- Roasted garlic (as mentioned above)
- Chopped onion
- Chopped tomato
- Cilantro
- Lime juice
- Hemp seeds
Preheat the oven to 205°C and arrange the sliced zucchinis on a baking sheet. Drizzle with olive oil, salt, and black pepper. Mix well.
Cut off the top of the garlic and place it in the center of the baking dish. Drizzle with the remaining olive oil, cover with foil.
Roast the zucchini and garlic for 20-25 minutes, then set the oven to broil and grill for 1-2 minutes until the zucchinis have brown marks.
Drain the lentils, mix with olive oil, salt, and garlic powder. Bake for 20-25 minutes, stirring until crispy.
Mix the baked lentils with olive oil, lime juice, and chili pepper.
Place the tofu in a food processor, add chipotle peppers, miso, lime zest, and salt. Add the garlic and blend until smooth.
Taste and add spices as needed. Letting the tofu rest in the fridge enhances its flavor.
Combine all components, garnish, and serve.
