Pan-fried Gnocchi with Sun-dried Tomato Garlic Ricotta | Clean Recipes
Hello dear kitchen friends! Today, I'm sharing a delicious recipe that you can prepare in just one pan and it's ready in only 30 minutes. Pan-fried gnocchi with sun-dried tomato garlic ricotta! Believe me, this recipe is both practical and very tasty. It will especially bring joy to your table after a busy day. Additionally, you can serve this dish with crispy bread for a flavor feast. - 200 grams firm or extra firm tofu
- 2 tablespoons nutritional yeast
- 1 teaspoon miso
- 1 teaspoon Italian seasoning
- 1 teaspoon dried basil
- 1 tablespoon lemon juice
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon black pepper (or red pepper flakes)
- ¼ teaspoon salt
- 2 teaspoons olive oil
- ¼ cup vegan mozzarella shreds (optional)
- 60 grams frozen spinach (thawed and lightly drained)
- 2 teaspoons olive oil
- 2 cloves garlic (finely chopped)
- 2 tablespoons sun-dried tomatoes (chopped)
- 1 to 2 tablespoons fresh basil
- 340 grams mini gnocchi
- 1 cup water (divided)
- ¼ teaspoon salt
- 450 to 570 grams pasta sauce (You can use tomato basil pasta sauce, garlic pasta sauce, or marinara.)

First, we prepare our tofu ricotta. If you have a food processor, add all the ingredients (except spinach) and blend until smooth. Then add the spinach and set aside. If using a bowl, mash the tofu well and add the other ingredients, then mix in the spinach.
Heat a large pan over medium heat. Add olive oil, then add the gnocchi and cook until golden. Then add the garlic and cook for another minute or two.
Add the sun-dried tomatoes and fresh basil (if using), and pour in half a cup of water. Spoon the tofu ricotta mixture over the gnocchi. Add the pasta sauce between them and pour in the remaining water.
Cover the pan and cook on medium-low heat for 12-14 minutes. Once it starts boiling, reduce the heat and continue cooking.
Finally, uncover, garnish with red pepper flakes and vegan mozzarella. Cook for another minute until the mozzarella melts. It's ready!

If you have an oven-safe pan, you can sprinkle some more mozzarella on top of the gnocchi and bake until golden. This will add even more flavor! If you like it spicier, you can increase the amount of red pepper flakes.
