- 2 teaspoons vegetable oil
- 1 cup chopped red onion
- 3 cloves garlic (finely chopped)
- 113 grams mushrooms (chopped)
- 1 teaspoon dried thyme
- ¼ teaspoon red pepper flakes
- ½ teaspoon salt
- 1 nori sheet (crumbled, optional)
- 2 tablespoons chopped sun-dried tomatoes
- 3 tablespoons kalamata olives (chopped or sliced)
- 425 grams canned chopped tomatoes
- 1 tablespoon nutritional yeast
- ½ to 1 cup water (or broth)
- 2 to 3 tablespoons vegan mozzarella
- 425 grams canned lima beans (drained)
- fresh chopped basil, red pepper flakes, vegan Parmesan
Heat a pan over medium heat and add the vegetable oil. Once the oil is hot, add the onions, garlic, and a pinch of salt. Stir and cook until the onions are translucent, about 4 minutes.
Now add the mushrooms, thyme, red pepper, salt, and optional nori sheet. Stir and cook for another 3-4 minutes. Then add the sun-dried tomatoes, olives, and nutritional yeast, and cook for one minute.
Add the canned tomatoes, cover, and cook until it reaches a jam-like consistency, about 6-8 minutes. Remember to stir around the 4th minute. Crush large tomato pieces.
Add the butter beans and adjust the liquid with water, vegan mozzarella, and butter beans. Stir and cover. Cook on medium-low heat for 10-15 minutes.
Finally, uncover and check the taste. Add salt, herbs, or red pepper if needed. If the sauce is too thick, add a bit more water.
