The Star of the Kitchen: Thanksgiving Turkey Meatballs

- 2 tablespoons olive oil or avocado oil
- 1/2 large white or yellow onion, finely chopped
- 2 large stalks celery, finely chopped
- 1 teaspoon sea salt (DIVIDED)
- 3 large cloves garlic, crushed
- 1/2 cup panko breadcrumbs
- 1/4 cup fresh parsley, finely chopped
- 1 teaspoon fresh rosemary, finely chopped
- 1 teaspoon fresh sage, finely chopped
- 450 grams ground turkey
- Mashed potatoes
- Green bean casserole
- Cranberry sauce
Preheat the oven to 204 degrees C and adjust the racks.
In a 12-inch cast iron skillet, heat the oil, add the onion, celery, and half of the salt. Cook for 5 minutes.
Add the garlic and cook for another minute, then transfer the vegetables to a mixing bowl.
Once the vegetables have cooled, add the breadcrumbs, parsley, rosemary, sage, and remaining salt, and mix.
Add the ground turkey and gently mix to combine. Shape the meatballs.
Arrange in the skillet, bake for 18-20 minutes, then broil on the top rack.
Ensure the internal temperature is 165 degrees F, serve, and enjoy!
