- 1/2 cup melted vegan butter
- 2/3 cup packed brown sugar
- 1/2 cup pumpkin puree
- 1 teaspoon vanilla extract
- 2/3 cup almond flour
- 2/3 cup gluten-free flour mix
- 3/4 teaspoon ground cinnamon
- 3/4 teaspoon pumpkin spice
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1/2 cup rolled oats
- 1/2 cup coarsely chopped pecans
Preheat your oven to 176 degrees and prepare your trays. Now we get to the fun part!
In a medium bowl, combine melted vegan butter, brown sugar, pumpkin puree, and vanilla extract. Mix well.
Add almond flour, gluten-free flour mix, cinnamon, pumpkin spice, baking soda, and salt. Once well combined, add oats and pecans.
