Try Once, You'll Always Make: Frozen Yogurt Cups
Hello dear kitchen friends! Today I bring you a very practical and equally delicious frozen yogurt cups recipe. If you're looking for a healthy snack for breakfast or during the day, this recipe is just for you. It's very easy to make and lasts a long time in the fridge. Plus, it's a recipe you can completely customize to your taste. Let's head to the kitchen!
- 3 pitted medjool dates (soaked in hot water and drained)
- Half a cup of nuts or seeds (according to your preference)
- Quarter cup of rolled oats (or millet/quinoa/buckwheat flakes)
- 150 grams of yogurt (e.g., coconut or soy)
- 100 grams of vegan cream cheese (or more yogurt for a lighter dessert)
- One-third cup of your preferred sweetener (I used xylitol)
- 100 grams of strawberries (optional - I used fresh)
- 1 and a half tablespoons of lemon or lime juice
- Fresh fruits (e.g., strawberries, raspberries, blackberries)
- Granola
First, soak the dates in hot water for 2-4 minutes, then drain. Don't worry, it's very easy!
Mix the dates, nuts, and oats in a food processor or blender until sticky. Are you ready?
Press the date mixture firmly into 8 silicone muffin molds. Now we've reached the most enjoyable part.
Then, mix the yogurt, cream cheese (if using), sweetener, lemon, and fruit until smooth. Taste and adjust sweetness or tartness as desired.
Pour the yogurt mixture over the base and add toppings like fruit and granola. Believe me, it's very delicious!
Freeze the granola yogurt cups for just 1-2 hours for a semi-frozen texture or until completely set. Wait at least 15 minutes to thaw before eating, so they soften and the flavor enhances. Enjoy!
