- 1 3/4 cups flour
- 1 1/2 tablespoons cornstarch
- 1/3 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup plant-based milk
- 1 1/2 tablespoons plant-based yogurt
- 1 tablespoon lemon juice
- 1 teaspoon apple cider vinegar
- 1/4 cup vegetable oil
- 1/2 teaspoon vanilla extract
- A few drops of almond extract
- 1 teaspoon grated lemon zest
- 1 cup raw cashews
- 1 cup coconut cream
- 1/4 cup fresh lemon juice
- 1/3 cup sugar
- 1/8 teaspoon salt
- 1/8 teaspoon turmeric
- 1 tablespoon grated lemon zest
- 1/2 teaspoon vanilla extract
Preheat the oven to 177°C. Now let's start preparing our cake!
Mix the dry ingredients in a bowl. Make sure the flour is not lumpy at this step.
Add the wet ingredients and mix until you get a homogeneous batter. If the consistency is too thin, you can add a bit more flour.
Pour the batter into your prepared baking pans and bake. 20-22 minutes for small pans, 28-30 minutes for large pans will be sufficient. Check with a toothpick test.
Drain the cashews and blend with the cream ingredients in a blender. Let the mixture rest a few times to achieve a creamy consistency.
Remove the cakes from the oven, let them cool a bit, then place them in the fridge to cool completely.
Trim the top of the cooled cakes and spread the cream evenly between the layers. Depending on the cream's consistency, you can let it sit in the freezer for a bit.
After completing the cake, let it rest in the fridge for 2-3 hours and then serve. Enjoy!
