Try Once, You'll Always Make It: Vegan Ginger Cake

- 2 cups unbleached all-purpose flour (240g)
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 heaping teaspoons ground ginger
- 1/4 + 1/8 teaspoon kosher salt
- 6 tablespoons vegan butter (84g)
- 1/2 cup Steen's Pure Cane Syrup or Lyle's Golden Syrup
- 1/3 cup plant-based milk (80mL)
- 1 teaspoon freshly squeezed lemon juice or apple cider vinegar
- 1/2 cup applesauce (4 oz/115 g)
- 1/3 cup packed brown sugar (65g)
- Optional: 3/4 cup currants or raisins
Preheat your oven to 175°C. Grease a 20 cm round cake pan with vegan butter and place a piece of parchment paper on the bottom.
Sift together the flour, baking powder, baking soda, cinnamon, ginger, and salt in a large mixing bowl.
In another bowl, mix the plant-based milk with the lemon juice or vinegar. While these sit, melt the vegan butter in a small saucepan. Add the syrup to it. Pour this warm mixture into the milk bowl. Add the applesauce and brown sugar, and mix everything together.
Pour these wet ingredients over the flour mixture. Mix well (a few small lumps of flour may remain, that's okay). If desired, add currants or raisins.
Bake the cake for 45 minutes or until the top forms a dome and the edges start to turn golden. Let the cake cool for 15 minutes, then remove it from the pan and let it cool completely on a wire rack. Slice and enjoy. Bon appétit!
