- 15 ounces extra firm tofu (pressed for at least 15 minutes and cut into bite-sized pieces)
- 1 teaspoon Kashmiri red chili powder
- ½ teaspoon salt
- ½ teaspoon baking powder
- 3 tablespoons cornstarch
- 1 tablespoon rice flour
- 1 tablespoon ginger garlic paste (or 4 cloves finely chopped garlic and ½” ginger, finely chopped)
- 2 teaspoons oil
- 2 tablespoons water (more if needed)
- 2 teaspoons oil
- ¼ teaspoon fennel seeds (crushed or chopped into small pieces)
- 4 cloves garlic (chopped)
- ½ inch ginger (chopped)
- 1 to 2 hot green peppers
- ½ cup chopped red onion (finely chopped)
- ¼ teaspoon salt
- 2 teaspoons ground coriander
- ½ teaspoon hot chili (or to taste)
- ½ teaspoon red pepper flakes (or to taste)
- 10 to 12 curry leaves (chopped)
- 2 tablespoons chopped mint
- 2 tablespoons soy sauce (use tamari for gluten-free)
- 2 teaspoons lemon juice

If you haven't done so already, drain the tofu, then cut it into bite-sized pieces and set aside.

Add the crispy tofu and coat well in the spicy onion mixture. Cook for a few more seconds to warm through. Garnish with green onion and lemon juice before serving.
