- 1/3 cup Raw Cashews (50g) (soaked for 1 hour)
- 1 Head of Garlic
- 1 teaspoon Olive Oil
- 1 Large Carrot (Peeled and chopped)
- 1 Large Portobello Mushroom (Chopped)
- 1 Medium Red Bell Pepper (Seeded and sliced)
- 1 cup Pumpkin (150g) (Peeled and chopped)
- 1 Tablespoon Olive Oil
- 1/2 teaspoon Sea Salt
- 1/2 teaspoon Freshly Ground Black Pepper
- 1/2 teaspoon Paprika
- 1/4 teaspoon Cayenne Pepper
- 15 oz Can of Chickpeas (Drained)
- 10 Sun-Dried Tomatoes
- 4 Tablespoons Olive Oil
- 2 Tablespoons Lemon Juice
- 1 Tablespoon Capers
- 1/8 teaspoon Red Pepper Flakes
- 1-2 Tablespoons Water (If needed, optional)
- Freshly Chopped Parsley
- Toasted Bread or Crackers
First, soak the cashews. Don't worry, it's very easy! Place the cashews in a bowl, pour hot water over them, and let them sit for 1 hour. Then drain and rinse.
Preheat the oven to 200°C. Now things are getting exciting!
Prepare the vegetables: Chop the carrot, mushroom, red pepper, and pumpkin, and place them in a bowl. Add olive oil, salt, black pepper, paprika, and cayenne pepper, and mix well.
Peel the garlic and trim the ends. Place it in foil, drizzle with olive oil, and rub it in well, then wrap it in the foil.
Place the vegetables and garlic on a baking tray and roast in the oven for 30 minutes.
Once the vegetables and garlic are roasted, if your cashews are ready, place all the ingredients in a food processor. Add the chickpeas, sun-dried tomatoes, olive oil, lemon juice, capers, and red pepper flakes. Process until smooth.
If the mixture is too thick, add a little water and blend again. Are you ready? Now we've reached the most enjoyable part!
Garnish the pate with fresh parsley and serve spread on toasted bread or crackers. Enjoy!
Vegan Pate - Surprise Your Guests Cooking Tips
Be careful when roasting the vegetables, don't overcook them. If your sun-dried tomatoes are too hard, you can soak them in some hot water. This recipe will be a favorite among your guests!
