A Ramadan Breeze in Your Kitchen: Homemade Pide
How about making that delightful Ramadan pide at home? Believe me, after trying this recipe, you'll forget about buying pide from outside. You'll love the delicious aromas spreading in your kitchen as the dough rises. Come on, let's add a touch of Ramadan spirit to your kitchen!
- 1 cup oat bran
- 3.5 cups flour
- 1.5 cups water
- 6 gr. fresh yeast
- 1 level teaspoon salt
- 1 tablespoon sesame seeds
- 1 tablespoon black cumin
- 1/3 cup water
- 1 egg yolk
- 1/2 cup yogurt
- 1/2 tea glass water
- 1 tablespoon olive oil
Take 1.5 cups of room temperature water in a large bowl, add the yeast and dissolve it by stirring with a silicone spatula.
Take 3.5 cups of flour in a separate bowl, make a well in the center, add the yeasty water and mix with a spatula.
Add salt to slightly less than half a cup of water, mix, and add to the dough. Now things are getting exciting!
After mixing for 10 minutes, take the dough to the counter and knead it a bit firmly. It will be a sticky dough, don't worry.
When the dough sticks less to your hands, sprinkle flour around it, divide it into two and make two balls. Stack these balls on top of each other and divide again. Repeat three times.
Leave the two dough balls covered in a warm place to rise for 2 hours.
Whisk the ingredients for the topping in a bowl.
Sprinkle oat bran on the board, take the risen dough and shape it into pide with wet hands.
Make square patterns on the edges and top with your fingertips. Spread the sauce you prepared for the topping and sprinkle with sesame and black cumin.
Transfer to a baking tray lined with parchment paper. Bake at 230 degrees for 5 minutes, then at 200 degrees for 15 minutes.
Serve hot, enjoy!
