- 120g (1 cup) Sweet rice flour (mochiko)
- 30g (1/4 cup) Tapioca starch
- 30g (2½ tablespoons) Granulated sugar
- 8g (2 teaspoons) Baking powder
- 1.5g (¼ teaspoon) Salt
- 1 Large egg, yolk and white separated
- 1 egg yolk (18g) Extra egg yolk
- 180g (¾ cup) Whole milk or non-dairy milk
- 28g (2 tablespoons) Unsalted butter or neutral oil, melted
- 4g (1 teaspoon) Vanilla extract
- 20g (1 tablespoon) Optional: Sweetened condensed milk
Preheat your waffle iron, don't forget to grease it.
In a medium bowl, whisk together the sweet rice flour, tapioca starch, sugar, baking powder, and salt.
Separate the egg yolks and whites, we will beat the whites nicely.
Whisk the egg yolks, milk, melted butter, vanilla, and condensed milk until smooth.
Add the egg yolk mixture to the dry ingredients and mix until smooth.
