- 1/2 cup sunflower seeds or pumpkin seeds
- 1 teaspoon coriander seeds
- 1/4 teaspoon fennel seeds (optional)
- 2 teaspoons oil
- 1.5 cups chopped onion
- 1 hot green pepper or 2 tablespoons green bell pepper
- 1/2 teaspoon smoked paprika
- 1.5 teaspoons old bay seasoning or 2 teaspoons cajun/taco/chili spice mix
- 1/2 teaspoon garlic powder
- 3/4 cup cooked white or brown rice
- 15 oz (425 grams) canned black beans, well drained
- 1/2 teaspoon salt
- 2 to 3 tablespoons barbecue sauce
- 1.5 tablespoons flaxseed meal
- 1/4 cup breadcrumbs
- Tomato slices
- Sprouts or baby greens
- Barbecue sauce, mustard or mayonnaise
First, let's toast the seeds: Add sunflower seeds to a pan over medium heat, toast for 2 minutes. Stir occasionally to prevent burning. Remove from the pan and let cool. Then add coriander and optionally fennel seeds, and toast for another minute.
Now let's prepare our smoky caramelized onions: Heat oil in a large pan, add onions, green pepper, salt, and sugar. Cook for 5 minutes, stirring occasionally. Add smoked paprika and stir. If your pan is drying out, you can add a bit of water. Continue cooking for another 3 minutes.
In a food processor, grind the toasted sunflower seeds, fennel, and coriander seeds into a coarse flour along with the spices.
Add two-thirds of the rice and 1 cup of black beans, salt, smoky caramelized onions, flaxseed meal, and barbecue sauce. Process until most of the beans are broken down.
Transfer the mixture to a bowl. Add breadcrumbs, remaining black beans, and rice. Adjust salt and spices to taste. If the mixture is too moist, add a bit more breadcrumbs. Chill in the fridge for 10 minutes.
Now it's time to shape the patties! Form patties with your hands or a mold. Heat the grill to medium-high and grill the patties for 3 to 5 minutes on each side. Alternatively, you can fry them in a pan with a little oil.
