How to Make Homemade Sesame Soba Noodles

- ¼ cup rice vinegar
- 2 tablespoons tamari (extra for serving)
- ½ teaspoon toasted sesame oil (extra for serving)
- 1 teaspoon grated fresh ginger
- 1 clove garlic (grated)
- ½ teaspoon maple syrup or honey
- 170 grams soba noodles
- Lemon wedge (for squeezing)
- 2 avocados (sliced)
- 2 cups cooked snap peas
- ¼ cup edamame
- 1 sliced watermelon radish (or 2 red radishes, very thinly sliced)
- ¼ cup fresh mint leaves
- Sesame seeds
Don't worry, it's very easy! First, we'll prepare our sauce. In a small bowl, whisk together rice vinegar, tamari, sesame oil, ginger, garlic, and maple syrup. Our sauce is ready!
Now we've reached the most enjoyable part: preparing the noodles. Boil water in a pot without salt and cook the soba noodles according to the package instructions. Drain and rinse well in cold water to prevent clumping.
Toss the noodles with the sauce and divide into 2 to 4 bowls. Now things get exciting! Squeeze fresh lemon juice over the avocado slices and add peas, edamame, radish, mint, and a pinch of sesame seeds to the bowls.
