- 1 and a half cups wheat berries (240g)
- 2 teaspoons olive oil or avocado oil
- 6 large Medjool dates
- 2 full cups radicchio, cut into 1.3 cm wide strips
- 2 full cups Tuscan kale, stems removed and cut into 1.3 cm wide strips
- 3/4 cup finely chopped celery (80g)
- 2/3 cup crispy vegan candied walnuts
- 1/2 cup chopped green onion tops (40g)
- 1/2 cup tangy apple cider vinegar dressing (120ml)
Boil plenty of salted water in a large, thick-bottomed pot. Add the wheat berries and cook like pasta. Boil until tender, then drain and let cool.
Heat the oil in a pan over medium-high heat. Add the pitted dates to the pan and cook until caramelized on both sides. Then chop them.
Place the wheat berries, dates, radicchio, kale, celery, walnuts, and green onions in a large mixing bowl. Pour the dressing over and mix well.
Taste and add salt, pepper, or a bit more dressing if necessary. That's it, your salad is ready to serve!
