Homemade Vegan Meatball Sandwiches

- 1 tablespoon extra virgin olive oil
- 3 cloves garlic, finely chopped
- 3 tablespoons finely chopped shallots or red onion
- 15 ounces canned lentils, drained (or 1 1/2 cups cooked lentils (green or brown))
- 1/2 teaspoon crushed fennel seeds
- 1/4 teaspoon red pepper flakes
- A pinch of nutmeg
- 1/2-3/4 teaspoon salt
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1/2 teaspoon oregano
- 1/2 teaspoon parsley
- 1 tablespoon nutritional yeast (optional)
- 1 1/2 tablespoons flaxseed meal (mixed with 3 tablespoons water)
- 1 tablespoon vegan Worcestershire sauce
- 1 tablespoon tomato paste
- 1/4 cup vegan mozzarella
- 3/4 cup breadcrumbs
- 18 to 20 ounces marinara sauce (or your preferred pasta sauce)
- 1/2 cup vegan mozzarella cheese
- 4 long sandwich rolls or another bread of your choice
Heat a pan over medium-low heat and add the olive oil. Add the garlic and shallots and cook until golden, then set aside.
Add the lentils to a bowl and mash half of them. Add the other ingredients except for the garlic, shallots, and breadcrumbs, and mix.
Add half a cup of breadcrumbs and mix. If the mixture is sticky, add a little more breadcrumbs or flour.
Line a baking dish with parchment paper. Take about 1.5 tablespoons of the meatball mixture, roll it, and place it on the baking dish.
Bake at 400 degrees Fahrenheit (206 degrees C) for 20-25 minutes. Remove the meatballs.
Place your sandwich rolls in the baking dish and brush with oil. Put them in the oven and toast for 3-5 minutes.
Place the meatballs on the bread, drizzle with pasta sauce, and add vegan cheese.
Keep in the oven for another 3-5 minutes until the cheese melts. Top with fresh basil and serve.
