Spinach Mushroom Beans - We Tried, We Loved!

- 1 teaspoon vegetable oil
- 170-225 grams thinly sliced mushrooms
- 1/8 teaspoon salt
- 1/4 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes
- 2 teaspoons vegetable oil (divided)
- 1 cup chopped onion
- 2 cloves garlic (finely chopped)
- 1-2 teaspoons Cajun seasoning
- 1 tablespoon flour
- 1/2 teaspoon salt
- 1.5 cups water
- 170 grams frozen spinach (thawed)
- 2 to 3 tablespoons vegan cream cheese
- 1/4 cup vegan parmesan
- 425 grams canned white beans
- red pepper flakes

Now things are getting good! Heat a large pan over medium-high heat and add 1 teaspoon of oil. Add the sliced mushrooms and cook, stirring occasionally, for 3-4 minutes. Add a pinch of salt, thyme, and red pepper flakes, and continue cooking until the mushrooms are browned. Set the mushrooms aside.
Add the remaining teaspoon of oil to the same pan. Once the oil is hot, add the chopped onions and garlic. Cook until the onions are golden, about 3-5 minutes. Add the Cajun seasoning, flour, and a bit of salt. Mix well and cook for another minute.
Now slowly add the water, incorporating the flour well. Add the remaining water and vegan cream cheese. Stir until the mixture is smooth. Add the spinach, vegan parmesan, and white beans. A wonderful aroma will spread, enjoy it!
Spread the mixture nicely in the pan, cover, and cook for 6-8 minutes. Taste and adjust the salt and consistency. Add half of the mushrooms to the mixture.
Garnish with red pepper flakes, the reserved mushrooms, and a bit more vegan parmesan. Serve hot. Enjoy your meal!
