Strawberry Mousse Cake - The Star of the Table

This cake is so delightful, offering a feast of flavors with its rich and soft layers filled with sweet and tangy strawberries. Plus, you can prepare it with a gluten-free option. - 1/2 cup non-dairy milk
- 1.5 tablespoons non-dairy yogurt
- 2.5 tablespoons vegetable oil
- 1/4 cup sugar
- 1/2 teaspoon vanilla extract
- 1 cup flour
- 1 tablespoon cornstarch (or tapioca starch)
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 13 to 14 large strawberries (hulled)
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 cup raw cashews (soaked in hot water for at least 15 minutes, then drained)
- 1 cup coconut cream
- 1/4 cup sugar
- 3 to 4 strawberries (hulled and thinly sliced)
Start by preheating your oven to 177°C.
In a bowl, mix the liquid ingredients and sugar. Continue mixing until the sugar dissolves.
In a separate bowl, mix the dry ingredients and add them to the liquid mixture. Stir until you get a dough consistency. If the dough is too stiff, you can add a bit of milk.
Pour the dough into a cake mold lined with parchment paper and place it in the oven. Bake for about 20-28 minutes. Check if it's done with a toothpick test.
Once the cake is baked, remove it from the oven and set it aside to cool.
Chop the strawberries and place them in a pot with the compote ingredients. Cook over medium heat until the strawberries release their juice.
Drain the cashews and blend them with coconut cream, sugar, and half of the compote until smooth.
Place the mixture in the freezer and let it firm up a bit.
Level the top of the cake and soak it with the compote.
Pour the mousse over the cake and smooth it out. Allow it to firm up a bit more in the freezer.
Finally, spread the remaining strawberry compote over the cake and let it sit in the freezer for at least 3 hours. Enjoy!
