Sun-Dried Tomato Hummus

- 1/2 cup lightly packed sun-dried tomatoes
- 1 (425 g) can chickpeas, drained, liquid reserved
- 2-4 medium garlic cloves, peeled
- 1/4 cup tahini
- 3 tablespoons lemon juice
- 1/2-3/4 teaspoon sea salt
- 1 teaspoon dried oregano
- 2-4 tablespoons olive oil
- 1/4 - 1/2 cup chickpea water
- Olive oil
- Roasted pine nuts
- Smoked paprika
Soak the sun-dried tomatoes in a bowl of warm water for 5 minutes. Drain well.
Drain the chickpeas, reserving the canning liquid.
Add all ingredients to a food processor and blend until creamy.
Taste and adjust with lemon juice or salt as needed.
Transfer to a bowl, garnish with olive oil, paprika, and pine nuts. Ready to serve!
