The Most Delicious Gluten-Free Texas Sheet Cake Recipe

- 1 cup unsalted butter (2 sticks, plus 1 tablespoon for greasing the pan)
- 1 cup hot water
- 34 g unsweetened Dutch-process cocoa powder
- 110 g sweet rice flour
- 81 g gluten-free oat flour
- 74 g millet flour
- 400 g granulated sugar
- 1/2 teaspoon kosher salt
- 1/2 cup buttermilk
- 2 large eggs (at room temperature)
- 1 teaspoon baking soda
- 1 teaspoon pure vanilla extract
- 4¾ cups powdered sugar
- 12 tablespoons unsalted butter (1½ sticks)
- 1/2 cup + 1 tablespoon buttermilk
- 6 tablespoons unsweetened Dutch-process cocoa powder
- 1½ teaspoons pure vanilla extract
- ¼ teaspoon kosher salt
- 1 cup roasted pecan pieces
Preheat the oven to 175°C and grease an 18x13 inch half-sheet baking pan with butter.
In a large mixing bowl, sift together oat flour, sweet rice flour, millet flour, sugar, and salt.
In a medium saucepan, melt the butter. Add the cocoa powder to the melted butter and stir in the hot water. Once the mixture boils, cook for another 30 seconds.
Pour this chocolate mixture over the dry ingredients and mix well.
In a separate bowl, whisk together the buttermilk and eggs. Add the baking soda and vanilla. Add this mixture to the chocolate mixture and whisk until smooth.
Pour the batter into the pan and spread evenly. Bake for about 24 minutes, until the center of the cake springs back when touched.
To prepare the frosting, sift the powdered sugar into a bowl. In a saucepan, bring the butter, buttermilk, and cocoa powder to a boil.
Pour this mixture over the powdered sugar, add the vanilla and salt. Whisk until smooth.
Pour the frosting over the cake 3 minutes after it comes out of the oven and spread evenly. Allow to cool before slicing.
