- 1 cup Baby Potatoes (peeled and chopped)
- 1 cup Sweet Potatoes (peeled and chopped)
- 1 teaspoon Salt (for cooking potatoes)
- 1 kilogram Cauliflower Florets
- 1 teaspoon Salt (for cooking cauliflower)
- 1 Medium Onion (white, yellow, or brown, chopped)
- 3 cloves Garlic (crushed)
- 1/4 cup Raw Cashews
- 1 tablespoon White Wine Vinegar
- 1/4 cup Nutritional Yeast
- 1 teaspoon Onion Powder
- 2 tablespoons Olive Oil
- 1/2 cup Vegetable Broth
- 1 tablespoon Low-sodium Soy Sauce
- 1/2 teaspoon Smoked Paprika
- 2 tablespoons Dijon Mustard
- 1/4 teaspoon Salt
- 1/4 teaspoon Black Pepper
- 1/2 cup Panko Bread Crumbs (28g)
- 2 tablespoons Vegan Butter (melted)
- 1 tablespoon Fresh Parsley (chopped, optional)
First, place your potatoes in a pot, add some salt, and fill with water to cover. Boil uncovered until tender. It's that easy!
Meanwhile, boil the cauliflower florets in another pot of salted water for 5 minutes, then drain.
Preheat the oven to 200°C, now things are getting exciting!
Heat olive oil in a pan and cook the onions until soft. Then add the garlic and cook for another 2 minutes.
Add the potatoes to the pan and toss with the spices. Cook until the flavors meld.
Transfer this entire mixture to a blender, add cashews, vinegar, nutritional yeast, vegetable broth, soy sauce, mustard, salt, and pepper. Blend until smooth.
Place the cauliflower florets in a large bowl and pour the prepared sauce over them, gently mixing to coat.
Mix the bread crumbs with vegan butter and spread evenly over the cauliflower.
Place the cauliflower in a baking dish and bake for 30-35 minutes, until the top is golden brown.
