How to Make Try Once, You'll Always Make Them: Vegan Cowboy Cookies
Hello dear readers! Today I'm sharing a recipe that will make you a kitchen wizard: Vegan Cowboy Cookies! These cookies are filled with natural ingredients like oats, coconut, and walnuts, and have an amazing melt-in-your-mouth flavor. This recipe will win the hearts of those who have adopted a vegan lifestyle, and the chocolate chips will more than satisfy your sweet cravings. Let's get started on making these delicious cookies!
- 1 1/2 cups Rolled Oats (150g)
- 1 cup Flour (125g)
- 1 cup Shredded Coconut (80g) or Unsweetened Shredded Coconut
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1 teaspoon Cinnamon
- 1/2 cup Vegan Butter (112g)
- 1 cup Light Brown Sugar (200g)
- 3 Tablespoons Maple Syrup (or Golden Syrup)
- 1 teaspoon Vanilla Extract
- 3 Tablespoons Soy Milk (or another plant-based milk)
- 1 cup Vegan Chocolate Chips (175g) and a little more to add on top of freshly baked cookies
- 1 cup Chopped Pecans (110g) and a little more to add on top of freshly baked cookies
Preheat the oven to 180°C (350°F) and line two large baking sheets with parchment paper.
In a mixing bowl, add rolled oats, flour, coconut, baking soda, salt, and cinnamon, and mix.
Add vegan butter and light brown sugar to your stand mixer bowl and beat until smooth.
Add maple syrup and vanilla extract and mix.
Add the dry ingredients to the wet mixture and mix with a spoon until you get a crumbly dough.
Add soy milk and mix.
Add vegan chocolate chips and chopped pecans and mix.
Break off pieces of dough and roll into balls. Try to put approximately equal amounts of vegan chocolate chips and pecans in each cookie.
Place the cookies evenly on two large baking sheets lined with parchment paper. Place them so that there are about 28 cookies in total on the two sheets.
Put in the oven and bake for 12 minutes. The edges should be firm and the tops lightly browned. It's okay if they're still a bit puffy.
Press a few more chocolate chips and chopped pecans onto the hot and soft freshly baked cookies.
Wait for them to cool and harden on the tray. Enjoy!
