How to Make Vegan Chocolate Mint Cookies - A Must for Your Guest Table 14 steps
1

Preheat the oven to 180°C (350°F) and line two baking sheets with parchment paper. Set aside.

2

Add the vegan butter, white and brown sugars to the bowl of your stand mixer and beat together.

3

Add the mint extract and mix well.

4

In a separate bowl, sift the flour and cocoa powder, then add the baking soda and salt. Mix well.

5

Add the dry ingredients to the wet mixture and mix by hand until crumbly.

6

Add the soy milk and mix until you get a thick cookie dough.

7

Fold in the chocolate chips.

8

Shape the dough into balls and place them evenly spaced on the two parchment-lined baking sheets. Aim for a total of 20 cookies, 10 per sheet.

9

Bake for 10 minutes. If the cookies still look very puffy when they come out of the oven, gently flatten them with a fork while they are soft and warm.

10

Allow them to cool and harden on the tray.

11

Once the cookies are completely cool, add the chocolate and coconut oil to a microwave-safe bowl. Heat in the microwave in 30-second intervals, stirring every 30 seconds, until melted and smooth.

12

Add the mint extract and stir until smooth.

13

Dip the cookies in the melted chocolate and place them back on the parchment-lined baking sheet. Sprinkle with crushed cane sugar.

14

Place the trays in the refrigerator for 5 minutes to set the chocolate. Enjoy!
