How to Make Vegan Cranberry Oat Cookies - Holiday Delight
Shall we step into the kitchen and prepare our delicious vegan cranberry oat cookies? These cookies will become a staple during the holiday season. - 1/2 cup vegan butter (112g)
- 1 cup light brown sugar (200g)
- 1 tablespoon maple syrup
- 1 tablespoon unsulfured molasses
- 1 tablespoon vanilla extract
- 1.5 cups rolled oats (150g)
- 1 cup all-purpose flour (125g)
- 1 cup shredded coconut (80g) (unsweetened)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 2 tablespoons soy milk (or other non-dairy milk)
- 3/4 cup dried cranberries (112g)
- 1/2 cup macadamia nuts (65g) (chopped)
Preheat the oven to 180°C and line two large baking sheets with parchment paper. Preparation is key, isn't it?
Beat the vegan butter and brown sugar well. If you don't have a mixer, don't worry, a hand mixer works great too.
Add the maple syrup, molasses, and vanilla extract. Did you notice how wonderful the mixture smells?
In a separate bowl, mix the oats, flour, coconut, baking soda, salt, and cinnamon. When the dry ingredients come together, the magic happens!
Add the dry mixture to the wet mixture and fold with a spatula. There you go, it's coming together!

Finally, add the cranberries and chopped macadamia nuts. These will crown the flavor!
Make balls from the dough and place them on the trays. 10 cookies per tray! They look fantastic!
Bake for 12 minutes. It's enough for the cookies to turn golden. The edges should be firm but the insides soft.
If the cookies are too puffy, gently press them down with a fork while still warm. It will be easier to handle once cooled.
