- 1 and ¼ cups vegan chocolate chips (218g, melted)
- 1 cup flour (188g)
- ¼ cup cocoa powder (21g, unsweetened)
- 1 teaspoon instant espresso powder
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ⅓ cup vegan butter (75g)
- ¾ cup light brown sugar (150g)
- ¼ cup white granulated sugar (50g)
- 1 teaspoon vanilla extract
- 2 tablespoons soy milk (or another plant-based milk)
- ¾ cup vegan chocolate chips (131g)
Place the vegan chocolate chips in a microwave-safe bowl. Heat, stirring every 30 seconds, until completely melted. Let cool, and enjoy the delightful aroma in the meantime!
Sift the flour and cocoa into a mixing bowl. Add the espresso powder, baking powder, and salt, and mix. Set aside; we'll need it soon!
In your stand mixer, beat the vegan butter with the brown and white sugar for 2 minutes. The mixture should be light and fluffy. Now things are getting exciting!
Add the vanilla extract and continue beating. Now add the cooled chocolate and beat for another 2 minutes. Get ready to be enchanted by the magic of chocolate!

Add the soy milk and mix until a dense cookie dough forms. The dough will be quite dense but sticky enough to form into balls.

Form the dough into balls and place them evenly spaced on two baking sheets lined with parchment paper. Chill in the freezer for 15 minutes while the oven preheats.
Preheat the oven to 180°C. Bake the cookies for 10 minutes. If they still look puffy when they come out of the oven, gently flatten them with a fork.
