Easy Homemade Vegan Balti Chicken Recipe

- 2 teaspoons oil
- 1 teaspoon cumin seeds
- 1 black cardamom (crushed or slightly open)
- 2 green cardamoms (crushed or slightly open)
- 1 cinnamon stick
- 6 black peppercorns (optional)
- 2 bay leaves
- 1 cup chopped red onion
- 2 teaspoons Kashmiri red chili powder (or paprika)
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 1/4 cup water
- 1 tablespoon ginger garlic paste (or 3 cloves garlic, 1/2 inch ginger chopped)
- 2 to 4 tablespoons chopped cilantro stems
- 2 tablespoons chopped mint, optional
- 1 tomato (chopped, optional)
- 1/2 cup tomato puree
- 1/2 teaspoon or more salt (divided)
- 1 to 1 1/2 cups water
- 280 to 340 grams vegan chicken
- 1/4 cup vegetable mince or 1/3 cup cooked lentils
- 1/4 cup plant-based yogurt
- Cilantro, sliced green chilies, and julienned ginger (for garnish)
In a large pan, heat the oil over medium heat. Once the oil is hot, add the cumin seeds and cook until they change color, about a minute.
Add all the other whole spices and mix well. When the bay leaves start to brown, add the onions and a pinch of salt. Cook until the onions are golden brown. You can sprinkle a little water to ensure even browning.
Add the ground spices and stir for a few seconds. Then add 1/4 cup of water and mix well to prevent the spices from burning. Cook while stirring for a few seconds.
Add the ginger garlic paste, cilantro, and mint, stir and cook for a minute. Then add the tomato puree, chopped tomato (optional), and salt, and cook for 2-3 minutes.
Add the vegan chicken, vegetable mince, and water, and mix well. Cover to bring the sauce to a boil and cook. Simmer on medium-low heat for about 10 minutes. If using seitan or soy curls, cook for 15 minutes.
Finally, add the yogurt and mix. Taste and adjust the salt and flavor. You can add a little sugar to balance the heat and saltiness if desired.
Turn off the heat, garnish with fresh cilantro, thinly sliced green chilies, and julienned ginger. Enjoy!
