Homemade Dutch Style Apple Pie

- 1 and a half cups gluten-free all-purpose flour mix (180 g)
- 1/4 teaspoon table salt (1.5 g)
- 1/2 cup (1 stick) cold butter, cut into small pieces (114 g)
- 3 tablespoons cold milk (45 ml)
- 1/2 teaspoon gluten-free vanilla extract (2 g)
- 1 tablespoon lemon juice (15 g)
- 3 pounds apples before peeling (1360 g)
- 1/4 cup brown sugar (55 g)
- 1/2 cup granulated sugar (100 g)
- 1/2 teaspoon table salt (3 g)
- 1 teaspoon ground cinnamon (3 g)
- 1 tablespoon cornstarch (8 g)
- 1 tablespoon water (15 g), more if needed
- 1 and a half cups gluten-free flour (150 g)
- 1/4 cup granulated sugar (50 g)
- 1/3 cup brown sugar (70 g)
- 1/4 teaspoon table salt (1.5 g)
- 1/2 cup butter, melted (113 g)
- Zest of half a lemon
In a medium bowl, whisk together the flour and salt. Don't worry, it's very easy!
Add the cold butter and mix with your fingers until the mixture resembles coarse crumbs.
Add the cold milk and knead until the dough comes together.
Add the vanilla extract and gently knead until a smooth dough ball forms.
Wrap the dough ball in plastic wrap and refrigerate for 1 hour.
Roll out the chilled dough between two pieces of parchment paper and place it in your pie dish.
Peel the apples and cut them into thin slices. Add the lemon juice.
Place the apples in a pot, sprinkle with sugars, salt, cinnamon, and cornstarch.
Add a tablespoon of water and cook over low heat. They should soften in 20 minutes.
Cool the cooked apples, then pour them into your pie crust.
Prepare the crumb mixture, melt the butter and mix with the dry ingredients.
Preheat the oven to 175°C, sprinkle the crumb mixture over the apple filling.
Bake for 50-60 minutes, until the edges turn golden. You can drizzle honey on top!
