How to Make Kitchen Feast: Banana Chocolate Pecan Muffin
How about creating a wonderful flavor in the kitchen? These banana chocolate pecan muffins are both vegan and gluten-free, appealing to every palate. A great option to have on hand for a lazy weekend morning or an afternoon coffee break. Believe me, once you try these muffins, you won't be able to give them up!
- 2 tablespoons flaxseed meal
- 1/4 cup water
- 2 medium ripe bananas
- 1/2 cup maple syrup
- 1/4 cup avocado oil
- 1 ½ teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon sea salt
- 1 cup gluten-free flour blend
- 1 cup almond flour
- 2/3 cup raw pecans, chopped
- 2/3 cup dark chocolate chips
Preheat your oven to 176 degrees and prepare your muffin tin. Greasing or using paper liners will make your job easier.
Prepare the flax egg by combining flaxseed meal and water in a large mixing bowl. Don't forget to wait 5 minutes.
Add the ripe bananas and mash until smooth using a fork or potato masher.
Add maple syrup, oil, baking powder, vanilla, and sea salt. Whisk well.
Add the gluten-free flour blend and almond flour. Stir with a wooden spoon and add the pecans and chocolate chips.
Divide the batter evenly into the muffin cups, don't forget to sprinkle chocolate chips on top.
Bake for 25-28 minutes. They're done when the tops are golden brown!
Cool in the tin for 5 minutes, then transfer to a cooling rack.
Store the muffins once completely cooled and enjoy.
