Tips for Making Vegan Cherry Hand Pies

- 454 grams frozen or fresh pitted sweet cherries
- 3 tablespoons cane sugar
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon cornstarch
- 2.5 cups unbleached all-purpose flour
- 1 teaspoon kosher salt
- 1 tablespoon cane sugar
- 224 grams cold vegan butter
- 1 teaspoon white wine vinegar
- 7-8 tablespoons ice water
- 1 tablespoon plant-based milk
- 1 tablespoon maple or agave syrup
To prepare the cherry filling, place cherries, sugar, lemon juice and zest, and cornstarch in a saucepan. Bring to a boil over medium heat and cook, stirring, for 5 minutes.
Transfer the filling to a bowl to cool. Cover and let it come to room temperature, then chill completely in the refrigerator.
For the dough, mix flour, salt, and sugar. Add cold butter and crush until pea-sized.
Add ice water and vinegar to the flour mixture. Once the dough comes together, form two disks, wrap in plastic wrap, and chill in the refrigerator.
Roll out the dough with a rolling pin and cut into rectangles. Place cherry filling and cover with another piece of dough. Press the edges with a fork to seal.
Preheat the oven to 220°C. Glaze the pies with milk and syrup and bake until golden brown. Serve once cooled!
